Abstract

Mazkur maqolada oziq-ovqat mahsulotlarini biologik konservatsiya qilish usullarining nazariy va amaliy asoslari yoritilgan. Oziq-ovqat mahsulotlarining sifatini saqlash, ularning saqlash muddatini uzaytirish hamda mikrobiologik xavfsizligini ta’minlashda biologik konservatsiyaning o‘rni tahlil qilingan. Sut, go‘sht, baliq hamda meva-sabzavot mahsulotlarini biologik konservatsiya qilishda qo‘llaniladigan foydali mikroorganizmlar, bakteriosinlar va fermentatsiya jarayonlarining ahamiyati yoritilgan. Shuningdek, sut kislotali bakteriyalarning patogen mikroorganizmlar rivojlanishini cheklashdagi roli, probiotik xususiyatlari hamda oziq-ovqat mahsulotlarining organoleptik ko‘rsatkichlariga ijobiy ta’siri ko‘rib chiqilgan. Biologik konservatsiya usullarining afzalliklari, kamchiliklari hamda zamonaviy biotexnologik yondashuvlar asosida ushbu yo‘nalishning rivojlanish istiqbollari tahlil qilingan. Tadqiqot natijalari biologik konservatsiya usullaridan foydalanish oziq-ovqat xavfsizligini ta’minlash, mahsulotlarning oziqaviy qiymatini saqlab qolish va ekologik xavfsiz texnologiyalarni joriy etishda muhim ahamiyat kasb etishini ko‘rsatadi.
