Abstract

Ushbu maqolada Helianthus annuus L. (kungaboqar) sanoati chiqindilari (savatchalari va poyalari)dan gidroliz-ekstraktsiya usuli yordamida pektin moddalarini ajratib olish texnologiyasi hamda ularning oʻziga xos funktsional-biologik xususiyatlari tadqiq etilgan. Tajribalar davomida kungaboqar pektinining kam etoksillanganlik darajasi, kalsiy ionlari ishtirokida gellanish xususiyati hamda inson organizmidan ogʻir metallarni chiqarib yuborish (detoksikatsiya) qobiliyati oʻrganilgan. Olingan natijalar ushbu chiqindilardan oziq-ovqat va farmatsevtika sanoatida import oʻrnini bosuvchi biologik faol qoʻshimcha sifatida foydalanish imkoniyatlarini koʻrsatadi.
